Make our homemade mayo is a healthy alternative to the processed version that we can find in the store since we can be sure about the quality and freshness of the ingredients we are using.
It’s light, healthy suitable for egg intolerance, and vegan.
Ingredients:
- 1 coffee cup of soy milk
- 1 1/2 tbsp of fresh lemon juice
- 2 tsp of dijon mustard
- 1 coffee cup of extra virgin olive oil
- 1 tsp of salt
- 1/2 tsp of black pepper (optional)

It’s light, healthy suitable for egg intolerance and vegan.
I combine in the mixing bowl soy milk, lemon juice and help myself mix with the whisk.
Then I add dijon mustard, salt, pepper, and slowly extra verging olive oil, keep mixing until my cream gets thicker. It takes a really few minutes to get our mayonnaise ready.
We can store it in the fridge and use it when need it or taste it immediately with our favorite meal.
