Four-person portion

  • 300 gr of fresh young green asparagus
  • 1 cup of fresh spinach
  • 1 green onion
  • 1 garlic clove
  • 6 cloves
  • 1 ginger
  • Curly-leaf parsley
  • 3 Thai green pepper
  • 3 tbsp of extra virgin olive oil
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 2 cup of fresh water

I put asparagus (keeping a few heads for decorating the dish), spinach, green onion, garlic clove, cloves, ginger, Curly-leaf parsley and Thai green pepper in my blender and mix until I get a green fresh cream.

Next, I add the fresh water, extra virgin olive oil, salt, and black pepper.

I help myself with a spoon and I fill the 4 plates with the raw soup.

It tastes delicious and is perfect for summertime when we are not in the mood to cook.

The aroma is delicate and at the same time, Thai pepper and ginger give this soup a chili spicy flavor.
