Purple cabbage has an high ratio of nutrients minerals and vitamins.

It’s an excellent source of vitamin C that means it has an high antioxidant capacity.

The strong purple color reflects its high concentration of phytonutrients.

It has a huge amount of vitamin K and anthocyanin that helps our brain for mental function and concentration.

Since purple cabbage is high in fiber aids in weight loss, making us feeling full and taking care of our nutritional needs.

The presence of potassium makes it a  great way to protect  us from elevated blood pressure.

Purple cabbage is a delicious vegetable that can be easily be introduced in our daily meal since it can be prepared in a number of ways, as salad, side dish and even as tart.

Give it a try to this healthy, simple, exotic and psychedelic purple cabbage tart.


  • 1/2 purple cabbage
  • 1 roll of puff pastry
  • 1 red onion
  • 250g firm tofu
  • 2 tsp salt
  • 2 tsp cumin seeds
  • 2 tsp five spice powder
  • 3 tbsp extra virgin olive oil

What you need to make purple cabbage tart:

  • Blender
  • A mixing blow
  • Hand blender
  • Baking pan

Give it a try to this healthy, simple, exotic and psychedelic purple cabbage tart.


First I preheat my oven to 220° C.

Next I chop the cabbage and the onion and then put all in the blender.

I combine in a bow  all the ingredients and mix them adding tofu, salt, cumin seeds, five spice powder and extra virgin olive oil.

Using the hand blender I quickly mix all the ingredients and have a soft mixture.

Finally I carefully put puff pastry in my baking pan and start to spread the purple mixture.

I bake the veggie tart for 35 minutes.

I made this veggie tart for the first time and I have to say that I was happy surprised from its light, refreshing and fruity taste, due for its delicate natural flavor and for the exotic aroma added by the five spice powder.
