Raw Okra with Tomato Heart

This is a delicious starter or side dish – fresh and wonderful-tasting.

Okra, also known as ladies’ fingers or gumbo, has multiple health benefits. Okra is rich in fiber and helps to fight digestion problems.

It’s high in antioxidants and it has also a rich amount of essential vitamins and minerals that make it a healthy vegetable that can aid us in weight loss, prevents diabetes by controlling our blood sugar.

Okra can be eaten raw, despite someone finding the characteristic “goo” or slime too slippery, Raw Okra with Tomato Heart is a recipe to try.

Ingredients:

One person portion

  • 3 Okras
  • 1 Big Tomato
  • Some Black Olives
  • Some Parsley fresh leaves
  • 1 tbsp Sunflower seeds

I cut the tomato into four pieces. I help myself with a spoon and remove gently the fleshy interior without breaking the tomato wedges skin (usually I make appetizers with the tomato skin).

I cut the okras into slices.

Next, I add the tomato heart, parsley, black olives, and sunflower seeds. When I eat this starter, the okra slime texture mixed with the pulp of tomato is minimized.

The seed pods meeting the sunflower seeds became more crunchy and the flavor of the black olive with the okra skin has a fresh taste. Raw Okra with Tomato Heart can be a healthy starter or side dish eaten during warm and hot weather because is fresh and light.
